Candida Diets - Why Yeast Extract Is OK

When attempting to control candida overgrowth, a yeast free diet is always part of the plan. However, not all yeast is active, one yeast product that can be had on the diet is yeast extract, the processes used in its production make it benign. Glutamic acids in yeast extracts are produced from an acid-base fermentation cycle, only found in some yeasts, typically ones bred for use in baking, autolyzed yeast extract consists of concentrations of yeast cells that are allowed to die and break up, so that the yeasts' digestive enzymes break their proteins down into simpler compounds. The yeast in yeast extract is therefore non active and of no concern in controlling candida overgrowth, this compound is actually used in a neutral solution as a growth medium for fungi and bacteria which means it has no activity left in it if it did it would begin to grow and make any experiment useless. ...
